i'm hosting a party for my class in psychology/ counseling as i try to finish my doctoral degree ( not sure about that, lol!).. there will be 12-16 people from different countries: asia, USA, europe..it's just our way of getting out from mean brainwork and having fun before the semestral break!

nopey, food delivery or catering service is not a good thing... i wanted to prepare spanish paella but that's too difficult , and it isn't christmas, anyway..

seriously, i'm running out of ideas... my plan is:  1 appetizer, 4 kinds for the main course, 3 types of dessert, hmm soup ,maybe?...

pretty please, do share any simple but delicious fare... recipes are most welcome!

i would love to hear other suggestions like table settings, games, etc..party date: SOON!

budget will be split among us; thank God!.. this is a dinner spree; informal get-up!..

let's go, soupers.. thanks!.. we can all benefit from this, yes?.. huggs

I can't even tell you how many events I have hosted for family and friends over the years, Nette. I've tried it both fancy, and casual.But it seems everyone always liked it best when I kept it simple. Sometimes the simpler things turn out to be the favorites! Years ago, out of desperation, I made a dip to serve with tortilla chips, that friends and family love. Now, I'm warning you, please excuse what we call it in my family (I don't even remember what it is suppose to be called LOL !). My kids started calling it "CAT POOP DIP" !! Now if you haven't lost your appetite by now, it is made with an 8 oz pkg of cream cheese, one 15 oz.can of chili (without beans), a few mild green chopped chili peppers, to taste, and a cup or more of grated cheddar cheese. Served warm with homemade or store bought tortilla chips! It is so good.....you can spice it hot or mild! Now even years later, everyone family/friends/strangers call it "Cat Poop".....!!! (It sort of looked like it I guess...the name I have to blame on my kids !!!

Tho I have no recipes... I love barbecues... salads... cole slaw... chips... and great desserts... especially pumpkin and pecan pies at this time of year... I love to make it informal so people can mingle and talk and sit next to the people they are more curious about and interested in meeting... The serving would be a smorgasboard and people are encouraged to bring some thing for the table that they wish to share with the others... I know this is not origional... but often effective.

you gave me a good idea; pecan pie!.. i haven't gobbled one in ages, carol.. hmm, my friend bakes a really delish one-- but don't rely on me; i flop when it comes to making pastries...thanks; am feeling the excitement already!..huggs

Talking of table settings, the easiest but most charming way to decorate the main areas would be to put one or two cut - flowers on small / medium-sized bowls with water. Place these on the dining table and other places where the guests would gather around.

I couldn't resist this blog. I'd go for any meat, pork or fish. Marinate with lemon and soy sauce with a bit of sugar. For the gravy or topping, mix butter, flour, cream, evaporated milk, fried garlic. I use all these ingredients for pork chops, beef slices, and big shrimps.Do you have a table setting already?

Hawaiian chicken, as we call it, is a really fun buffet item. You put pieces of white chicken meat mixed with broth and/or cream of chicken soup and add a bit of flour to make it thick like a sauce. The people spoon this over their rice. Then you can have many choices for them to put on top of the whole thing: chopped water chestnuts, celery, onions, pineapple chunks, shredded cheese, crispy chinese noodles,etc. OR do a chili pot luck where everyone brings their best chili recipe and do a taste testing contest.

Nette. do you like the chicken dish or that spegetti. Both are fast!! I have a good dessert with nuts . Pumpkin cream cheese bars. Or you can do other flavors like lemon, etc. If I can track down the recipe, I will send it!

If you are making your own sauce, I usually prefer Italian sausage rather than ground beef. Adds a little zest:)

I also think spagetti dinner with nice bread loaves dipped in garlic or other bread dips and wonderful salads, or maybe a Mexican theme! there are so many different appetizers you can do with Italian and with Mexican. Chinese too! I like Apple bee's type of appetizers! There are so many wonderful things, Nette. But you could never go wrong with a pizza party, with many styles of pizza to choose from and the appetizer being different kinds of salads.

There are lots of quick and easy recipes for quiche. I love spinach quiche. How about you? All kinds of quiches. Yum!

Very easy to make. You can add any ingredient you like. Only takes about an hour to cook.

I have a simple Crock-Pot meatball recipe...throw in meatballs with 2 jars of chilli sauce and 1 jar grape jelly...let it cook for an hour on high. Simple and delicious.

Appetizer..Maybe dips included?I do the olive dip..Easy ..cheap and yummy... All you need is a lage jar of olives(green or black) ,2cloves garlic, one teaspoon curry, three tablespoons olive oil .and if you want add two water-biscuits or a cracker..Blend tog. in a blender...and you'll have a delcious dip. Do you consider different types of pasta amd sauces..and anyone can take some of each like a pasta buffet? Do you need easy sweet recipes : ) .Bruschietta ..Toasted bread with chopped tomatoes..gsrlic..blk olives..and parsley and some olive oil is good too. : )

I'll send you a recipe for sweet chilli glazed salmon, so so simple to make and absolutely delicious and it cooks in no time - friends have made it with chicken too and I use the sauce with any type of fish - will also send you my lemon tart recipe:-) quick and simple to make:-) sounds like an amazing party you are having Nette:-)
