When my mother was a young woman , Olive oil could only be bought in a chemists shop and cooking oils were unheard of , Lard was the thing everyone used for fry ups  England had a bad reputation for its food and perhaps it was thoroughly deserved but thankfully our food is so much better these days  You just haven't lived until you've eaten at Rick Stein's

Those fish dishes are out of this world but for me , That involves a 300 mile drive just to get there , So I'm not going to have a lot of change out of £150 by the time I've paid out for petrol for the car etc and who can afford that these days ?

Traditional home cooking still gets my vote , Corned beef hash and Yorkshire pudding is a still a favourite , Every time I cook it I think of my grandma

She cooked a  big pan of the hash every day and my grandfather poured it into his thermos flask for work  Of course there was always some left for me. They took me on my first ever trip to Ireland and it was there I first tasted colcannon , Such a simple dish but delicious . Chinese and Indian foods now count as my favourites but I love to cook and try new things

So I'd be delighted if any of my fellow soupers have a favourite dish and wouldn't mind guiding me to a recipe  For Yorkshire pudding See James Martin  A wonderful Yorkshire born chef

Yorkshire mans Yorkshire pudding . 2 mugs of plain flour . 3 eggs , teaspoon of salt. Half teaspoon black pepper . Semi skimmed milk . Put flour in mixing bowl, salt and pepper too . Break the 3 eggs into bowl and mix With a fork . Add milk a little at a time until batter is thick rich and creamy . Let stand for about an hour . pre heat oven to maximum setting , put teaspoon of veg oil in each compartment of muffin tin . Use finger to oil all round compartment. Put in oven until oil begins smoking . Fill up with batter and put back in oven , 15 to 20 mins on top shelf until golden brown ,serve with onion gravy.

A classic English pudding , Spotted dick. 250g self-raising flour pinch of salt 125g shredded suet 180g currants 80g caster sugar finely grated zest 1 lemon finely grated zest 1 small orange 150ml whole milk, plus 2-3 tbsp custard, to serve

I always buy the english puddung ready made..but Imight give this a try..We usually buy it at Christmas time,and We serve it real hot.Its nice to pour some brandy or scotch over it .and light up a small flame..Tnks for sharing.

iNGREDIENTS FOR COTTAGE PIE 3 tbsp olive oil 1¼kg beef mince 2 onions, finely chopped 3 carrots, chopped 3 celery sticks, chopped 2 garlic cloves, finely chopped 3 tbsp plain flour 1 tbsp tomato purée large glass red wine (optional) 850ml beef stock 4 tbsp Worcestershire sauce few thyme sprigs 2 bay leaves For the mash 1.8kg potatoes, chopped 225ml milk 25g butter 200g strong cheddar, grated freshly grated

I do love cooking..I even have a collection of cookery books from many different countries.This Christmas I was given a gift called 'The bible.of cooking'.I love following Jamie Oliver as well..and many other chefs even on tv.What do you enjoy eating most?Is it meat? Fish!pasta?..I have plenty of recipes but depends what you are searching for.I even have traditiinal simple maltese cakes ..and the bible of healthy eating.I like olive oil with some home made bread and fresh tomatoes..basil and mozzarella or goat cheese..: ).

The butcher will help Im sure ...We even cook stuffed bragioli in Malta.Its flat beef (the cheap one) filled with bacon ,hardboiled eggs and minced beef plus some garlic..We roll it in the shape of a cylinder (like a sausage roll) and cook it in stew lr in the oven.I use toothpicks to keep the roll closed..It comes very good..So many recipes in the world

Re beef-I always remove it from.refrigerator and allow it to come to room temperature.I always make multiple cuts.Many times I pour some scotch or lemom..or something acidic as a tenderizer..I allow it in the beef for about two hrs.I rub the beef with some olive oil and rub in salt and pepper.I preheat the oven on a high temp 200celsius.I roast the beef for 15mins..Then lower temperature to 180 celsius..I always let it rest in a warm place for 15mins then..so the muscle rests and its more tender..Re beef then its up to you..You can replace scotch and instead use mustard or you can use garlic and rosemary.The trick was till I learnt how to get it tender ..Then re ingredients it can be plain or whatever goes to yr taste

Veal milanese-This is very easy..Ingredients for 4 veal cutlets-,3tbsp olive oil,4tbsp plain flour,1onion,white wine 60ml,200g marinated artichoke hearts (optional),400g .cherry tomatoes and few basil leaves (shredded).),salt and pepper. Method- Combine flour and half teaspoon each of salt and pepper. then dip the cutlets to coat them all over,2) Heat one tbsp of the oil in a pan,add cutlets for 3mins till golden brown and cooked through.Turn them once . Remove and keep warm.Add remaining oil,fry onion,add wine,bring to boil,Stir artichokes(optional)tomatoes and basil,bring to boil.Voila -you have your cutlets and sauce.You can pour sauce over some rice.: )

Preheat the oven to 220degrees before you put the pork in the oven Leave it on high temperature for twenty mins. then cook it on low 180 temperature..Rub in hoarse salt in the skin before putting it in the oven and a pinch of sugar ..It should come crispy this way.My friend dries the belly pork with a hairdryer before using this method cause of unecessary moist can reduce the crispiness..But it works fine without the dryer for me.I' ll be back to read your recipe later and others'recipes here and post the best simple recipes i know in reply : )

only ever cooked fennel with fish , If you have a meat recipe for that I'd love to try it , Only meat I can't get right is belly pork , I just cannot get it to crisp up .

I too have a large collection of cookery books Charmaine but they deal with English dishes mainly . I live alone , So most days its cheese on toast or something quick , I get to practice when my family or friends come round.

I love chinese and indian cuisine too..though I don t ea it oftenly.I love sushi as well and has tried it at home...I have a recipe of chicken with honey and lemon which comes delicious.I love using lots of herbs and spices too..I love using rosemary and fennel a lot.

Hi Darren..I live in Pennsylvania and one of our all time favorites (Pennsylvania Dutch influence) is boiled ham potpie. Another is creamed chicken and waffles.. They are not hard to make really and so good!

Andrea pls share some americam recipes..I love trying them out..Easy ones pls : ) Lately Im doing the bread cake with nuts and currants..At times sibstitutr with bananas or apple instead of currants.Its simple and 99percent fat free..:.)Waiing recipes.I love cooking as much as poetry.Wish nikko could join.She loves cooking

Biscuits can taste good if made well. They are a bread product. The dough is formed into circles and placed on a cookie sheet and they rise a little bit (not as big as regular bread) You can use them as dumplings with chicken. You can put creamed beef or egg gravy over them or just eat them plain. They have a flaky texture. Google an image of them. I bet you might know them.

Book: Shattered Sighs
