Gloves and Kitchen Secrets - Hgarvey Daniel Esquire's Blog

This is only for those who have ever gone out to eat. Health regulations now a days says you have to wear latex gloves I have worked in kitchens for over 45 years (30 without gloves) Germs have invaded the Kitchen of many resturants Now I know many of You will say I don't want to get Ecoli go to hospital for 2 weeks or they use Gloves in hospitals to be sure everything is Sanitized. In an Operating room Everything is Sanitized not so in any Kitchen Now I have to tell YOU I have had several warnings about mixing a salad without Gloves on I sanitize my hands 30 times a day at the Sanitizing sink Until now I have never worked in a resturant that was charged with passing on a foodbourn illness (samanilla) it wasn't because of bare hands touching YOUR food but the Gloves sitting in a box they have a computer or something that detects germs and our open boxes of gloves was of the charts Give me a often used Sanitizing sink anyday.

The media creates panics that add to the costs of living. Now, if you get lunch meat and cheese, the butcher or clerk wear a pair for the meat and then change for the cheese. Sara Kendrick Date: 10/12/2011 8:30:00 AM Harvey, I cook for my family a large number of meals every week..I worry about passing something on by touching the dog or cat and have bacteria on my hands so I wash, wash, wash..It is sad that the gloves get contaminated with bacteria..Once one puts the gloves on it would be hard to wash the gloves but that is what should be done..I have not heard of anyone in our area getting sick from eating at a restaurant but I did three times in my life..Once at an Applebees from a salad that boiled egg that was under cooked and twice from a Hardees which I have not eaten there since the happenings.Sara Login to Reply

Date: 10/12/2011 2:33:00 AM Ok these are just my thoughts and (a wee bit observation) but using gloves in the kitchen can sometimes lend a false sense of security when it comes to sanitation...some still tend to touch everything and probably even sanitize less than if they were just bare handed-- I found it soo weird sometimes (especially what I observe here in some food stalls)...yup, they use gloves but then they're also the ones who handle the money?! oh cripers! We did some microbial smears in the lab before for microbio, swabbing common things that we handle everyday, you would not believe just where you can get all those bacteria --scary beary O_o Login to Reply

Lee Ramage Date: 10/11/2011 11:58:00 PM Oh boy, I am Infectious Disease nurse of 30 years my friend. THe major foodborne illnesses are Salmonella, Campylobacter, Yersinia,Shigella, E. coli 0:157, Norwalk agent (Noroviruses) and a multitude of parasites that can kill people in food. Handwashing compliance is at best 30-50% percent. Latex gloves are not necessary but any type of glove is appropriate to handle raw food but glove must be removed and handwashing done or Hand hygiene. GLoves and handwashing both must be done. Gloves should be kept in an area attached to wall or safe place away from water and other contamination. These added precautions are unfortunately necessary as these organisms can kill...it only takes 1 10millionth of a ml to get into food to kill someone! That's the truth. Lee Login to Reply
