Cooking Shrimp (Cocktail)

Thought I'd share what I came up with in the last year or so about cooking shrimp. First, I never buy the precooked anymore even if I have zero time---serve cheese and crackers! Most people have over cooked shrimp for years and they're too tough--not good! Never refreeze what you buy because it's almost always been frozen before unless you met the shrimp boat at the dock. Okay, here it is---buy bags of frozen shrimp, preferably around the 20 per pound size---pay no attention to labels, just the count and make sure they are frozen uncooked/raw with shell on. Put however many you want in a sauce pan (still frozen) and cover with enough water so they look comfortable--in Italian "nota too little, nota too much". Here's the secret--bring to a boil (baby sit it or you'll be sorry cuz it boils over immediately and will STINK!) Take it off the stove and within a minute put it under cold running water, peel them leaving the tails for presentation and put them in the fridge to chill. Don't buy cocktail sauce, just use some ketchup, a little lemon and a little horseradish to taste and you're good. Thank me later.

I cook mine this way too, Craig: It makes them so tender and juicy. After they are peeled, I sprinkle on white pepper and a little Himalayan pink salt. I make a pink cocktail sauce using fresh whipped cream, ketchup, dash of Worcestershire sauce, and lemon juice. Put the on a layer of shredded iceberg lettuce in cocktail glasses. Yummy. SuZ

Suz--really----this is a MUST try!---I have all of the above except for fresh whipped cream which I can make from the heavy cream I have---LOVIN new ideas---hugs

My sister's husband is so proud of his shrimp cooking with special sauce. I tried so hard to swallow one down but it gagged me!! I don't know how people can stand this food but I am glad that you have found a great way to prepare it.

AD, One of the only certainties in life is that no one will like everything and that those who do love it are glad, because it means more for them---what do you like that many others don't---but then, I recall that you are a "safe" eater---most people are, hence the proliferation of comfort food restaurants which I love as well---Hugs!

I want to buy it thawed and cooked, tail off. Throw it into a bowl with some thousand island and rosemary and just stuff my face with it.

Sounds delish Craig! my favorite method is first...jumbo prawns head on from Asian Market (not available in our local "distribution center based" groceries)...put in bag with good evoo & kosher salt...shake bag...lay flat on parchment-lined baking sheet...preheat oven 400 degrees...bake 10mn...serve with lemons & Louisiana hot sauce, bobsyeruncle!

I'd love to contribute, (love to cook), but, despite crab meat being my favorite food, (and shrimp high on my list), I nonetheless acquired a shellfish allergy two years ago, and my life with shellfish is, sadly ... kaput! (A new, loving relationship with epinephrine has thus begun) ;-)

No, (Craig), and I live in the lobster capital of the world, lol, (though I personally like crab even more -it's sweeter and more tender) ... a shellfish allergy is actually an allergy to iodine, so it depends on current levels. Dale - Epi Nephrine - she's the new cook at a local Italian restaurant that I fell in love with, (she feeds me fresh pasta by hand) ... you may have heard of her brother-in-law, Sal ... Sal Monella??
