Nearlypolitan pizza.. I bought this countertop pizza oven (Forno Magnifico) from Costco before Christmas for $75. It's a clone of the G3 Ferrari Delizia that is a big seller on Amazon in Italy. It produces a pizza pretty close to one made in a wood-fired oven, particularly if you mod it like most Italians (and I) did. With the mods, I can get the stone well over 800F (but the sweet spot is between 750-800) to get that bottom charring characteristic of pizza Napoletana DOC. I used a food processor to make the ball, using ice water to keep the dough cool - 125g of Caputo 00 flour, 75g of H2O, 1/4 tsp instant yeast, 1/2 tsp salt. 12 hrs of fermentation, ball, 4 hrs second rise. Three minutes of cooking with 2 turns. You can make good pizza anywhere, even in a camper - a moveable feast!
