Thought I would share some pictures of my cooking a bit at a time, starting with our lunch today. I had a duck in the freezer that I had been wanting to roast for Christmas, but we are heading to Raleigh to spend Christmas with my son and his family, so I roasted it today in my little countertop oven, which has a rotisserie attachment. I like roast duck, but the real gold is the duck fat rendered, which I used when roasting the potatoes after the duck was done. The other side was my wife Toni's fresh homemade cranberry sauce with mandarins and walnuts. My homemade Tuscan bread (made w/o salt) and some Prosecco finished off the main course. Dessert was my homemade pumpkin bread (with raisins and pecans, sweetened with maple syrup) and to gild the lily, some maple syrup liquor from Canada. A nice cup of espresso to finish. Ahh...
