Azure blue skies weep in rent glacial torrents,
iridescent earth sun trap poised  to garner sympathy,
dark red cloud’s indignant float might yet rumble,
toxic deluge drenches mudbank plot as toilers whine,
thunderstruck I gaze at wild indigo sea mist on brine-fleck shore  

Edge of seat terra firma species orange alert mere bluster,
grim altitude apocalypse for amber moon orb,
rampant shower pockmark with visual scar as trenchant plague,
vapour trail  from lachrymose horizon now a shrunken haze,
alarm bell’s doleful peal across an impact cratered expanse  once sumptuous mint green

Stream of gurgling silken brook upon reciprocal bright cadence,
otherworldly pine from volatile nebulae’s damp swathe,
vapid  biome acreage a gaunt reflection though surreal,
despite magenta stardust  twinkle whose infant  phase  corralled
by wayward drizzle

Hemisphere by half redolent of sombre devastation,
yet exotic visual  haunt is that vaunted shadow zone,
sweet maple leaf  ether bound refuge from monsoon rife,
pot of gold opal strewn paradise escape hatch,
from lesion blight  topsoil or open sore empyrean 

Purple leaf and bell pepper cascade swirling o'er panic stricken globe,
perfume clad hillock under hawk-eye squint,
denizens idyllic foster atmospheric canny urban vault,
they hobble gingerly on salmon pink stone bridge en route to harried terrain rescue

The Green Pepper

Written upon the contemplation of---a bell pepper prior to 
chopping it up for stew

 
Flat white seeds cluster
Like ants on a candy cane
hiding the secret
of millions of unborn
pepper plants.
Slowly we blossom, 
explode around our center,
dangling like Christmas balls
green against green.
The story of our lives lies
within us,
tucked in a safe with no key, 
Nature's treasure chest.

Seafood Gumbo

Seafood Gumbo

Start with a dark brown Roux
Just like those Cajuns do

Next add the bell pepper and onion too
Tomatoes and garlic cloves, just a few

Cover it all with chicken stock
as this will help the flavors to unlock

File' and smoked sausage now go into the pot
Add the crab meat and peeled shrimp that were freshly caught

Serve it over a cup of rice
You'll find the that it tastes real nice

Put in enough pepper to set your mouth aglow
Now eat up that bowl of seafood gumbo

Omelette au fromage!
It was like simply taking a risk,
In making omelette, breaking and whisk.
To drive it smoother than silk,
Add up some water or milk.

Chop, chop, chop!
Bulb onion, tomato, bell pepper, coriander and dill,
Salt ,black pepper, whip all before relaxing and chill.
Oh! Have some patience and wait till the butter melt,
As soon as it muster some heat from the hot pan felt.

Let the batter spread!
Hope nothing is left to tell,
Keep flapping untill it cooks well.
Ready! At the center sprinkle some grated cheese,
Enjoy hot while relaxing in the cool breeze.

Craked and stired,
Life is like a Omelette au fromage,
Whirl of love, anger and joy are hot served.

3 cups of pureed shrimp
3 cups of grounded white fish
1/2 cup of lemon juice
3 cups of bread crumbs
1 tablespoon of mace
3 tablespoons of cayenne pepper

1/2 cup of parmesan cheese (dried grated)
2 cups of heavy cream

in a food processor,  mix fish and shrimp
add seasonings, add bread crumbs
mix smooth.
add heavy cream, mix until rich and creamy, add bread
crumbs to even out the consistency.
in a non stick muffin pan, scoop fish and shrimp mixture in
bake in a in a square baking pan filled with hot water.
bake until golden brown.
fuse together
1/4 cup of olive oil 1/4 cup of lemon juice
5 tablespoons of chives, adding more oil if consistency is incorrect


in a large oven ready pot with a lid
add 4 cups of beef broth
2 cups of chopped broccoli
3 cups of chopped cabbage
1 cups of chopped fresh kale
2 cups of chopped fresh cauliflower
2 cups of minced onion
1/4 cup of crushed garlic
2 cups of minced potatoes
1 cup of minced carrots
2 cups of diced fresh tomatoes
1 cup of minced green bell pepper
1/4 cup of chopped celery
4 tablespoons of soy sauce
2 cup of minced  smoked hock meat (cooked)
5 tablespoons of red pepper flakes
cook until the potatoes are tender and you can smell the hock meat blended with the veggies!

Two cups of diced raw chicken,sauteed in butter,one cup of asparagus ,two cups of sliced mushrooms,add the affenia's Annio sauce.Add one and a half cup of heavy cream,one cup of grated Parmigiano-reggiano remove from heat,add to one pound of cooked linguine ,top with green onions.

2 cups of pureed shrimp
1 cup of chopped turkey bacon
4 cups of flour (self rising)
1/4 cups of coconut flakes
3/4 cups of green onion
3 T celery seeds (toasted)
2 T sesame seeds (toasted)
5 Tablespoons of crushed Garlic
1/2 cup of red bell pepper(diced)
1/4 cup of olive oil( fused with 2 Tablespoon of cayenne pepper)
2 T of lemon zest
3 T spiced rum
1/4 cup of chopped mango
3 egg yolks
1 & 1/4 cup of buttermilk
4 egg whites whipped to stiff peaks

mix all the ingredients,(all except the egg whites)
mix smooth, and set aside. fold in the egg whites
on a flat hot oiled skillet, spoon the fluffy mixture
onto the skillet, making four inch round pancake
flip when golden brown.
serve with a pomegranate syrup...………….


10 pound fresh ham
score the fat with diamond shapes
coat with a mixture of liquid smoke, honey and orange juice
(about 5 Tablespoons each)

mix together
1/4 cup of cayenne pepper
5 T garlic powder
7 T of onion powder
1/4 cup of ground ginger
6 T of ground cloves
1 cup of grounded pecans ( coarse)
 2 cups granulated brown sugar
5 T of orange zest
4 tablespoons of salt
 coat the ham, and cover with foil,
bake for about four hours at 350, use thermometer to keep doneness 
serve with some twice fried plantains

1 teaspoon each of thyme ,rosemary, fennel seeds
2 crushed tumeric
5 tablespoons of orange juice
7-8 poached eggs

Poach eggs set aside

Bring stock, sweet potatoes, and heavy cream to a boil
allow to thicken.Add orange juice crown royal.add all but the eggs. Taste and season. Add eggs top top of soup in serving bowl.

in a pressure cooker cook for about two hours, or until tender.
serve with a reduced rendition of the sauce,
1 cup of the sauce, 1 cup of pineapple juice, 1/3 cup of vinegar
1 tablespoon of cayenne, cook reduce to about a 1 and 1/2 cup of sauce.

Ingredients
6 tablespoons salted butter
1 small red bell pepper, sliced 
1 small yellow bell pepper, sliced 
1/2 yellow onion, sliced 
1/2 teaspoon kosher salt 
8 ounces thinly sliced deli roast beef 
Couple dashes of Worcestershire 
2 tablespoons whole-grain mustard 
4 slices thick-sliced bread (Texas toast) 
4 slices provolone cheese 
1/4 cup Homemade Cheese Sauce

Directions
Special equipment: a panini maker, optional

Heat 2 tablespoons of butter in a large skillet over medium heat. Add the peppers and onion, season with the salt and cook, stirring occasionally, until soft and golden, 8 to 10 minutes.

Throw the roast beef into the same skillet, breaking it up a little as you go. Add a few dashes of Worcestershire and warm for about a minute or so. Remove from the heat.
To build: Heat a panini maker (or set a grill pan or skillet over medium-low heat).

Spread half of the mustard onto a slice of bread and top with 2 slices of provolone. Add half of the beef and veggie mix. Top with half of the Homemade Cheese Sauce and another slice of bread. Spread the top side of the bread with 1 tablespoon of butter. Repeat and build the second sandwich.

Invert the sandwiches butter-side down on the hot panini maker (or grill pan or skillet). Spread another tablespoon of butter on each of the tops.

Close the panini maker and grill until the bread is crusty and golden and the cheese is melted, 4 to 5 minutes. (If using a grill pan or skillet, carefully flip the sandwiches halfway through.) Slice in half and ENJOY.

Sautee veggies in olive oil( onions, garlic ,celery, red peppers),, add sausage and livers add fish stock and red pepper flakes, adjust seasoning, add gravy stir, add the red beans, and top with sesame seeds !

2 New York Strips (patted dry)
1 teaspoon of garlic powder
1 teaspoon of salt
1 teaspoon of pepper
3 tablespoons of olive oil
2 tablespoons of butter

in a casted iron skillet
(preheated)
add oil, and butter
sprinkle seasoning to all sides of the steaks
place steaks in oil, and sear one side to a crisp sear,
turn and do the same to the other side, ( about 4 & 1/2 minutes on each side)
place in a preheated oven for 15 minutes about medium , and remove
and slather with butter and serve with the rice and beans.
