Premium Member Seafood File' Gumbo

Sunday dinner is a time for family gathering
Enjoying conversation and home-cooked food
At the home of matriarch or patriarch of the clan,
Feasting on gumbo is a tradition for our brood
Oysters, shrimp, blue crab from Lake Pontchartrain
Onion, bell pepper and celery ~ Trinity of seasoning
Dark caramel color of roux though stirring is a pain

File' powder is made from ground sassafras leaves
It's used to thicken to a consistency that is nice
Leaving it out is a sin in the world of Creole cuisine
E'ach ladle of seafood's bounty is served with rice

Grateful to the cook for the effort to please our taste
Using the right ingredients brings smiles to the table
Makes us a happy family when nothing goes to waste
Broth of gumbo is a local favorite in New Orleans
Offensive not to have another bowl if you're able

Premium Member LADLE OF SOUP

Words dissolve in a simmering pot~
not soup, but something more.
Each ladle releases a new verse,
a flavor never before tasted.

Some mix their sorrow as deeply as a roux,
while others scatter hope like coarse black pepper.
A smidgen of resentment bitters the broth
while laughter improves the brew.

I bring my scraps, my burnt-edged rhymes,
my half-chewed thoughts still warm.
The pot absolves the awkward lines,
transforming them into poesies.

And when the steam has filled the room,
when my tongue is tinctured,
I leave not fed—but changed, undone~
with someone else’s hunger inside.

My Wife

She come up here
Telling me what I
Suppose to do
I cuss her out
Cause I in love
Wiff you

Talking all that trash
Bytch what want
Me to do
Tell her to her face
I in love
Wiff you

Bytches and snitches too
He the zimma core roux
Gravy thick as hell
What's a gal to do
Call my boys
See they crazy too

Ain't scare to say
I in love
Wiff you

Turnips

What is hungry that
These turnips
Shall be fattened
With bacon. This
Spoke the troll
he gathered turnips
from Onsager s garden.
Breadcrumbs shall
atop this au gratin
With bacon , pumpkin
from Onsager s mystery
Garden He was angry
because Ole Onsager
Put fatback in front
Of the bacon hiding it
from the Scrooges and
Mizzers. But me Jack
the Troll but mi hand
beneath all that fatback
and found this treasure trove
Of sugarcured bacon. I saw
Turnip greens atop the bulbs
Of earthy goodness.
I remember the from the book
Of Sages, the words of
Meade's and Meanest.
The greens of this frost bit
Place is the garden of the
Mizzers. Only the leaves of
Tender fresh turnips are for
Consumption . My cassorolle
Shall aroma of garlic, onions
and carrots.the crumbled bacon
Shall nearest thee.. the cream and
Roux shall mix with the broth
And these turnips and pumpkins
Shall be loved and adorned.
Not to be looked over by the
Mizzers and Scrooges..
The ground beneath me
So happy d you
Need a pickax
To break it!

Titties in Bra!

Song's of Stessed Women
"The Stresses Of Love"
       Axiro and Orixa
The Dried Cabbage Queen"

Scalloped

Enamel finger-smeared thick with butter
Yellow onions, yellow butter, floured and browned
Just add cream
From roux to dream
Now spice to glue that hold my world together

The team assembles for its tasty mission
Cheddar, gouda, mozz and more
Thick sheets of ham
Tubers sliced translucent
Layered, latticed, clothed in white bliss
Sealed deep into my black Dutch Oven

Four hundred twenty-five degrees, twice boiling
Every five minutes, I keep checking
Time warps
seconds are hours
Only half done, removing the covering

Top comes off, melting marbarella muck
Gilded golden gruyere
Splattering over spuds
Swirling cheese seas
Miasmic fragrant fromage tauntingly teased air

Beep! Beep! Beep! It's done!
Don't waste a moment
Too hot to taste
Bubbling lava lake
Slowly crusting cheesy skin emerging from the oven

Finally, the soup solidified, gooey cultured cream
Ready for the fork and spoon
Potatoes caked
Ham baked
Reality as gastro-goodness manifested dream

Onto my plate, my fork, my palette, my bliss

Premium Member Vincent and Paul

It’s fall of 1888, the south of France,
In the verdant fields of Arles,
Two artists shared a single dream,
And so began their quarrel.
Vincent paved the way for Paul
With bold sunflower sprays.
Paul dissembled, stating plain,
“More practiced effort pays.”
“Don't smile before December,”
Said the mentor to his charge.
And the student pegged his better
As a bon vivant at large.
So, their tenure at the Yellow House
Grew troublesome and dark.
Their artists’ shared collective
Strayed a long way off its mark.
Dry and cold, the Mistral winds
Spread madness like a plague,
To infiltrate poor Vincent’s mind,
Whose memories grew vague.
Mania, delirium, anxiety, and fear,
Climaxed when the voices told him,
“You don’t need that ear!”
He’d heard no praise, regardless.
Dr. Rey used his sorry portrait
To fix his chicken coop.
Then Theo got engaged,
And Paul sailed away to Tahiti.
Now time’s become history,
And that paint smeared canvas,
Nailed to a chicken coop
Means to claim a hefty sum.
And Le Fou Roux lies cold in his grave,
Unmindful of the legend he’s become.
