Bubbles form on the surface - and then go pop.
If it looks like it's shiny and it's still wet, 
it probably isn't quite ready yet.  
I think watching it is really a trip -

the other like a cook
they specialized in pancakes
the best, you can't deny 
Sean made them taste like heaven
Finn stacked them high

supplies came from all around
in wagons and in trucks
Sean whipped up the batter
and ol' Finn he constructs
with eggs from every chicken
and milk from every cow
maple syrup miracles
from the oats that they did grow 

when these flapjack masters
grew old and had to die
they made a stack of hotcakes
and they climbed it to the sky
kids, each time you eat griddle cakes
you should be like me
stack 'em high
and think of Sean and Finn McGee

There are tears mixed 
into the pancake batter
sun is still obfuscated 
by the window shades
without sunshine, I still 
wind up a morning person
Tobacco clings to me, 
where your scent would be
sewn with many memories 
into the mesh of myself
a premature family crest, 
stained and worn

The new day shows 
only one outcome remains
the eggs are runny, 
my nose sniffles into an arid oasis
no sunny side seems 
to show up these days
I wake up to an empty pillow, 
your space hollow through
but I still cannot but help myself 
from making breakfast for two.

Pleasure palace princesses provided puny particulars providing big
Porky plebes who placated porcupines, poking peacock’s replacement.

It inched closer to me
As it grew very fat
I held out my plate
And it dropped 
Just like that!

Pancake Batter Bessie
She makes flapjacks so fine
Avoiding corn syrup 
With Tabasco, liver and onions sublime.

We try to stop her 
But she is obtrusive and a ghost
Where we make our own batter 
We hide it with our toast.

For Bessie will take that batter 
And add extra stuff galore.
Peanut butter and sausage
Corn, pickles, oranges and more.

Bessie empties our pantries in the middle of the night
And grills up inventive pancakes that fill every counter in sight.
Our mother has asked her to stay out of her kitchen.
Pancake Batter Bessy’s creative juices can’t for they are always itch’n.
