Best Enchiladas Poems
Today for lunch I dined on some Tex-Mex cuisine,
jalapeno topped enchiladas and refried beans;
a favorite here in Texas, that can’t be denied,
but this afternoon I am battling the fire inside.
Washed it down with a margarita and wedge of lime,
it was very soothing and delicious at the time.
It gave my head a little buzz and made me cross-eyed,
but now my gut is suffering from this fire inside.
I used to have no trouble eating this spicy food,
but now it causes burning in my stomach to intrude.
And yet I do not worry for in my desk does hide
a jar of Tums to relieve me from this fire inside.

Potato chip, I love you up,
my darling little buttercup.
A cup! A Reese’s chocolate one
with peanut butter. Oh, what fun!
What fun is time with nacho chips;
delightful cheese to tease my lips.
My lips around a hamburger,
with onion rings my heart to stir.
Stir the chili in the pot.
Add Tabasco; cook it hot.
Hot, that snack I love so well,
is buttered popcorn that I smell.
Smell the pasta fantasy-
sauce and parmesan for me.
Me and cheesecake, cherries atop.
Once I start, I cannot stop.
Stop for ice cream; what I wish-
a sundae sitting in a dish.
Dish me up some southern fried
with mashed potatoes on the side.
A side of bacon, crispy fat.
I see nothing wrong in that!
That’s a spicy hot tamale.
Enchiladas make me jolly.
Jolly Christmas; candies sweet,
turkey, ham; so much to eat.
Eat a pizza. It’s the best.
Now I’ve gotta take a rest.

THE MEXICAN
I went over to my friends house last night.
I love it when he smiles with a grin,
He holds the door open, and welcomes me in.
With a style of a gentleman.
"MI CASA ES SU CASA" ~~~~~~(he says)
At first I did not know what he meant.
I don't fully speak Mexican.
I never got the hint,
when he called me his brown 'DULCE' medicine.
Funny how I thought he was a *WhiteSican* ~~(lol)
Always offering me 'TORTILLAS' with rice and beans.
OH! Now I now exactly what he means.
On Thursdays when we play 'CHALUPA'. ~~~~~(aka*bingo)
He'll remind me not to forget-
my 'GUACAMOLE JALAPEÑO' dip.
We'll talk and laugh and,
oops there he goes again with the gas.
Blames it on all them beans he eats.
Than he'll talk me into dancing "LA CUCARACHA," ~~~(with him)
Dancing and jumping to the beat,
he always steps on my feet.
MMM I love it when he makes "ENCHILADAS!" ~~~(all for me)
We sit and watch Spanish 'NOVELLAS' on TV.
I never complain, thinking he knew what they where saying'
It's not the right time to tell him I'm a silly Texan,
with a poor excuse when it comes to a 'MEXICAN!'
I'll keep it to my self and enjoy the cute things he does for me.
I love the words he speaks before I leave.
Like a gentleman he opens the door.
He hugs me and calls me his "AMOR!'
He waits for me, as I get in to my car.
Than he'll yell~ 'ASTA LUGO MI AMIGA!'
I'll smile and turn back and say,
~"ASTA LA VISTA BABE!"~

Yummy steak fajitas with a pound of sour cream,
along with hot salsa and many tortilla chips, I do wish,
chicken quesadillas are my number one dainty dream,
I’d have to say Mexican food is my favorite savory dish.
I eat more than my stomach seems to be able to handle,
then I write and sleep it off until the next dinner time,
my life is so full of food it’s in a messy complete shamble,
it’s time for hard and soft tacos as I think of a rhyme.
Cheese enchiladas are good from my gramma’s recipe,
a few green onions topped with delectable hot sauce,
black beans mixed in with cilantro so incredibly spicy!
with just a pinch of hot chili powder gently tossed.
A complete meal with palatable food upon my plate,
entices me for more before I even take the first bite,
for the scrumptiousness of my love for food is innate,
when I was just a wee young lady it was love at first sight.
The greatest feeling about eating is filling up my void,
even though it seems silly and hard to comprehend,
but Mexican food will always be very hard to avoid,
at the restaurants I’ll always be the first to recommend.
Oh, the edibles and luscious cuisine I choose to love to eat,
fill my tummy with rumbles and tasty appetizers so great,
oh, I almost forgot, Mexican corn dip is a delicious treat,
for the scrumptiousness of my love for food is always innate.

Clyde's Fine Country Diner is located about a mile south of town.
If you're lookin' fer rib-stickin' grub, its the greatest place aroun'!
Clyde retired after cookin' fer twenty-two years in the U.S. Navy,
Servin' up gobs of SOS, more delicately known as biscuits 'n' gravy!
It ain't a fancy place, jes' some booths and a dozen tables er so,
Dominated by a friendly but saucy-tongued waitress named Ruby Flo.
Farmers in John Deere caps meet there fer breakfast ever' day.
The Baptist Ladies Aid Society meets each Tuesday noon to dine 'n' pray.
Country and Western blares from the juke box near the kitchen door.
Ain't no fancy carpet gracin' the place, jes' a squeakin' wooden floor.
The menu ain't changed much over the years but it is quite replete,
With homemade pies, toxic navy coffee plus plain good things to eat.
Sundays, he features fried chicken, peas and smashed pertaters,
Mondays, soup du jour and tossed salad with garden fresh termaters.
Tuesdays, Clyde offers Mexican with enchiladas and tacos in the shell
Wednesdays, the speciality is green chili soup, the hottest this side of hell!
Thursdays, you can enjoy all you can eat of macaroni and cheese.
Fridays, he features either chicken fried steak er a servin' of Chinese.
Saturdays, is his famous chef d'oeuvre, prawns and black angus steak!
It ain't a 5-star café but Clyde serves great grub, of that there's no mistake!

I doff my fedora to the feller who invented pertater chips!
That genius developed the ideal thingy in which to immerse our dips!
How could we survive sans our weekly fix of Dominoes pizza pie,
Or a half-dozen Dunkin Donuts consumed on the sly?
Ain't nothin' as finger lickin' good as Kentucky Fried, original of course,
Or a Wendy's triple bacon 'burger when you're as famished as a horse!
Ah! The myriad of Mexican fixin's offered by the local Taco Bell!
Chimichangas, burritos, tacos, tostadas and enchiladas as well!
Japanese and Chinese establishments offer mysterious and fancy fare.
Try sushi, octopus, crawfish or deep fried squid if you dare!
If you crave ice cream, cookies or a hunk of cake or such cuisine,
Hie yourself on down the street to the nearest Dairy Queen!
For the hotdog aficionado there are weenie varieties galore;
Foot longs, chilidogs, smothered in sauerkraut and so many more!
Want some scrumptious and satisfying grub that'll fill your belly?
Get a ham on rye, thick salami or a Rueben at the neighborhood deli!
At Dad's BBQ you can order any kind of barbeque with greasy fries.
To top off the pancakes at The Village Inn you can buy chocolate pies!
Doctors and nutritionists would cringe at such a diet of course.
Fiddle faddle! I'll keep on eatin' that stuff with absolutely no remorese!

Explanation
Joseph Beuys is a controversial artist, one of his
works is called 'food for thought'. I saw this at
the museum of psychiatry when I guided some folks;
theme of the exposition was "lost in memory".
Next to the museum is the garden where 3 of my
sculptural works can be visited. We did so.

And guacamole so slimy in the throat
As it leaves a greenish covering coat
Most things are wrapped in a corn tortilla
That is classed as finger food implement freer
So you have Chilaquiles, Pozole and Tacos al pastor,
Tostadas, Chiles en nogada, Elote, Enchiladas, Mole and Tamales more
All hard to pronounce for an Australian now
For those that like them it’s all up to you
Chow down is what you can do
But don’t wait for me I don’t like it too.
