Best Parmesan Poems
What use is a poet,
if without a pen,
like a chef without
a sharp set of knives.
How bland is the soup,
without sincere ingredients.
Nourishing soul food needs
fresh free verses of vegetables,
sweet syllables of stock
and an alliteration of
parmesan, paprika or parsley.
It is pointless being mute,
when there is so much to say.
But too much salt in the soup,
can leave a bitter taste.
No pen scribes with the same garnish,
each pair of eyes focus differently.
Like they say,
too many grammar police,
can spoil the broth.
Too much pepper in
a poem will lead to sneezing.
Not all poets,
share the same beliefs.
Not all soup lovers,
enjoy chicken soup-
especially those with a
vegetarian vocabulary.
In the absence of judgement,
words becomes pure.
With the right ingredients,
the soup is a symphony of flavours.
Let the blood that flows
from your veins,
become the ink that
creates the perfect soup.

Potato chip, I love you up,
my darling little buttercup.
A cup! A Reese’s chocolate one
with peanut butter. Oh, what fun!
What fun is time with nacho chips;
delightful cheese to tease my lips.
My lips around a hamburger,
with onion rings my heart to stir.
Stir the chili in the pot.
Add Tabasco; cook it hot.
Hot, that snack I love so well,
is buttered popcorn that I smell.
Smell the pasta fantasy-
sauce and parmesan for me.
Me and cheesecake, cherries atop.
Once I start, I cannot stop.
Stop for ice cream; what I wish-
a sundae sitting in a dish.
Dish me up some southern fried
with mashed potatoes on the side.
A side of bacon, crispy fat.
I see nothing wrong in that!
That’s a spicy hot tamale.
Enchiladas make me jolly.
Jolly Christmas; candies sweet,
turkey, ham; so much to eat.
Eat a pizza. It’s the best.
Now I’ve gotta take a rest.

Very Senior Love
You had just finished telling me
You had stopped dying your hair,
At 90, you said no one would care
When
He came into the restaurant
Where we were eating together.
It was a “Mom and Pop’s” Italian,
“Sit down with us,” you beckoned,
And Santa Claus with his twinkling eyes,
And a smile as big as a sunrise,
Ordered Egg Parmesan,
The love in your eyes marched on.
No more did we have a conversation,
Sparks were flying as love ignited.
I saw your hands holding beneath the table.
Ninety to a day,
So warm hearted was I, but
Jealous from that day forward of
Senior Love.
I would stop dying my hair.

Can you forget that piece of cheese
that you inhaled? Oh, just a crumb it was.
But breathing while chewing, then choking!
Was it Cheddar, Cheshire?
Or that Limburger, Parmesan?
But, oh, that piece of cheese!
Not a morsel you'll forget,
or a temporary amnesia that will bring you peace.
A double Gloucester, some feta or mozzarella?
What about that Parmigiana-Reggiano?
Better, far better, not to inhale
a piece of cheese. It's peace you need.

PASTA: A FORK OF HEAVEN
In a pot of bubbling boiling water,
I drop hard nine inches long bundle of farfelles..
Minutes passed,between my fingertips,
I pressed one strand, al- dente!
In a platter glittering white,
I form a fist of fresh-cooked pasta noodles,
pouring a hot scoop of white
creamy silky sauce made from:
parmesan and pecorino
melted, blended in a saucepan,
flavored more with a savory stock,
tossed of shallots, saffron and lean meat.
The sauce must be rich enough
coating all the threads of farfelles...
Garnishing it with grated cheese,
teaspoonful crunchy diced bacon,
a pinch of chopped flat leaf parsley...
Voila! Who could refuse this tasty fork of heaven?

Light Verse
My mother was an excellent cook, not fancy but home cooking,
Our kitchen was always full of delicious and mouth watering smells;
We kids had our favourites, of course, and it was spaghetti and meatballs,
The succulent aromas drifted and floated throughout the house.
Even to this day when I eat this dish I feel the love of my family,
It was not just the handmade pasta or the thick sweet sauce;
Or the delectable meatballs with parmesan cheese all over the top,
And how we mopped up the bowl with a piece of Italian bread.
It was the whole scene, now memory, the vision of togetherness,
Such a simple dish of pasta and sauce is still a bowl of comfort;
Always a family night favourite, so robust and sweet, and flavourful,
And around the table we talked of life and things that mattered.
I found my mother's recipe diary in her belongings after her death,
It is full of meals of my childhood and a lot involved pasta;
Alphabet soup, macaroni and cheese, ravioli, lasagna and fettuccini,
Recipes for long and short shapes, tubes, twisted and flat pasta.
Now that diary is my treasure, it takes me back to the kitchen,
Where mother and father taught me about morals and ethics;
While I helped with the pasta and holding hands at suppertime,
We thanked the Lord for the food before us and for our family.
But today, I still love pasta and I follow mother's recipe almost,
Except for ethical reasons I make mine vegetarian, still good;
The pasta with a sauce of tomatoes, basil, oregano and garlic,
So yummy and scrumptious, it gives me that feel-good feeling.

I should eat healthy, I really should! But life is too short for that. Food, food, food,
it chases away the blues, it brings comfort to the soul. So here is a list of the foods
that I L.O.V.E. and that make me happy. You will note a theme of cheese and
dripping butter (and chocolate) . . .
a chocolate bar, anytime
bananas, green, not ripe
crackers and cheese, as a snack
drenched in blue cheese, salads and homemade croutons
even, tortilla chips and chunky salsa
French fries from a chip wagon (on my way home from the gym)
grandma's recipe for beef stew with loads of vegetables and a rich gravy
hamburgers and hotdogs off the barbeque with all the fixings
ice-cream, chocolate of course
just out of the oven, french bread
keep the donuts and coffee coming
loads of meatballs, made from mom's recipe (in a sweet tangy sauce)
macaroni made with three kinds of cheese
nothing better, than spaghetti with meat sauce and parmesan cheese
onion soup, french canadian style, dripping with cheese
pizza, deluxe (peanut butter on toast before bed)
quick take out of chicken wings with hot sauce
really, really old cheddar cheese
steaming cobs of corn, dripping with butter and salt
tomato, bacon, and lettuce sandwich
until I say stop, chocolate
vegetables fresh for a farmers market
what is wrong with me, this is all so unhealthy
x-tra, of everything, please
yogurt with strawberries on the bottom
zesty dill pickles, aged one year

In the world of pasta, there’s one that can’t be beat.
And it’s made with zesty sauce, cheeses, and with meat.
Put some water on the stove; get it nice and hot.
Add wide noodles, fluted-edged, to the boiling pot.
Meanwhile, simmer your meat sauce. Nothing’s better than
what you’re going to prepare, layered in a pan.
On the bottom goes the sauce, noodles over that.
Then the cheeses (I use three). Never scrimp on fat!
Mozzarella, even Cheddar - what a cheesy mix.
No Ricotta? Cottage cheese can be an easy fix!
Layer noodles, sauce and cheese; Parmesan on top.
Then dig in; but once you do, it’s real hard to stop!

Lyric
A Sharp Cheddar sun,
with a Swiss cheese moon.
A Blue cheese river flowing,
with sweet Romano fumes.
A Parmesan pathway,
with some String cheese logs.
To enjoy the Asiago butterflies,
and the Fontina frogs.
Gouda birds singing,
in the Mozzarella trees.
Havarti caterpillars climbing,
on the Pepper Jack leaves.
Aged Cheddar flowers,
with Fontina bees.
A cottage cheese mountain,
and a Lorraine Swiss breeze.
Here I will stay forever,
in this lovely land of cheese.
If you care to stop by,
bring some crackers please.

Your auntre is about to start your just warming up
hot garlic bread with a wonderful spread, Chris's secret recipe if he

Perfect Pizza
Empty the kitchen of red wood trees and chairs
Clear all phones and children from the room
Build a giant cooking space right there
The area must be six times larger than the one before
Place a big wooden table in the center
When construction’s done the fun begins
Buy an oven ten feet wide and then you start
Roll the mammoth dough until it’s thin
And six feet in circumference
Pour 2 gallons of fresh tomato sauce all over
Use a little basil for some flavor
Bake it until its crisp and let it cool
I like to add my naked wife as a topping
Make sure she showers first
Don’t want no dirty pie
I Place mozzarella and olive oil gently about her
And sprinkle Parmesan all over sweetie pie
Trying not to get any in her hair or eyes
Then roll the pizza around her like a blanket
Start at the edges first and eat it slow
When finished or satisfied
Lay back and have a coke
Save a slice for later
Smile and love that pizza pie

I want pizza,
from the pickles to olives,
I crave some food,
from pepperoni to cheese.
I want macaroni and cheese,
from elbow pasta to rigatoni,
I crave some food,
from cheddar cheese to parmesan cheese.
I want ice cream,
from chocolate to strawberry,
I crave some dessert,
from whipped cream to a cherry on top.
