Crawfish Cornbread Stuffing

It all starts with the cornbread buttermilk, of course seared in an iron skillet crunchy outer crust southern tradition slap-your-mom good! Crawfish, Andouille sausage, crumbled up cornbread, onions, celery, apples, cranberries, pecans, cinnamon and sage, moistened and baked!

Ode To Our Raccoon’s By: Tom Wright 1-18-2020 Around two thirty most mornings, I gaze out the rear window and see. A family of Raccoon’s foraging, on pecans from under our tree. Pecan hulls litter the sidewalks, but of these morsels I won’t deprive. For I realize It’s one of God’s creatures, doing its best to just survive.

October Morn By: Tom Wright 10/26/01 A boy's silvery breath, a Jack-O-Lantern's glow. Amid cascading leaves, dangles an old elm's mistletoe. Corn stalks, neatly shocked, emit the sun ray's glisten. Migrating geese overhead, with heart palpating, I listen. Squirrel's are at haste, pecans and acorns are falling. Grass, with it's veneer of frost, signals winter is calling.

Glad to Allow Little Red to Join Us

Everybody helped build the communal treehouse
Badger, fox, bunny, chipmunk, squirrel, owl and mouse.
In the end we served molasses, honey and jam on bread.
Can I join you up there? Asked a hen named Little Red.

We knew she was picked on by her lazy roommates.
So we said “why not” and she brought along some crates.
We now had pecans, dumplings, tootsie rolls and fresh sirloin.
We were certainly glad now that we had allowed her to join.
