Skoaled

Pound a turkey breast thin and flat.
in a bowl mix 2 cups of  cooked rice.
2 cups of shredded cheese
1 link of cooked sausage minced
2 cloves of garlic
2/3 cups of chopped onion
1/4 cup of cilantro
1/4 cup of lemon juuice
2 teaspoons of cayeene pepper
1 teaspoon of fish stock
1&1/2 cup of chopped or pureed shrimp
mix well and place in a piping bag.
filling in the center of the turkey breast.
roll  to seal both sides using a double dip method
flour and eggwash and coat with panko.
deep fry in a mixture of olive oil and veggie oil.
cook golden and remove
bake for 35 minutes or until done.

serve with a cheesy grits and a veggie stir fry.

Toffa Toffa

3 cups shredded chicken ( optional)
1 guart of chicken feet broth( optional)
Or
3 cups of shredded pork
1 quart of pigfeet broth
(Or combine)
,1 quart of veggie broth
2 cups of sauteed onion
2 cups of roasted red pepper
1/4 cup of sauteed celery
6 minced cloves of garlic
1 sprig of thyme
1/2 chopped sun dried tomatoes
1 cup of chopped portabella

Thicken broth and add ingredients

4 cups of shredded fried cabbage
1/4 cup of sliced carrots
1/3 cup of green onion
Sesame seeds toast 2 tablespoons
2 tablespoons of fish stock
3 tablespoons of sugar
4 tablespoons of minced garlic
1/4 of dehydrated onion
3 tablespoons of lemon juice
3 tablespoons of lemongrass
2 tablespoons of cayenne
4 tablespoons of coconut shredded
Soy sauce
1/4 cup of chopped turkey bacon
5 tablespoons of minced shrimp (optional)
Egg roll wrappers
Veggie oil for frying

12 cups of cooked rice

As a side garnish shred two cup of
Cucumber
1 cup of shredded apples ( with pork)
Toss in lemon juice and olive oil (1/4 cup each)
4 cups of chopped cilantro
2 tablespoons of garlic powder
 2 tablespoons of Red pepper flakes 
2/3 of French fried onions
Crush in a ziplock bag
Toss together and

Rice in the bowl
Soup on top
Eggrolls sliced stop soup
Garnish on top

Ugah Fugah a Moralistic Tale

Ugah Fugah (A moralistic tale)

.Ugah Fugah lived in a cave, 
away back at Earths dawn. 
You would have really liked him. 
( he never cut the lawn.) 

Now eating was a hassle, 
there was no local store. 
You had to chase and kill. 
( a lot of blood and gore.) 

Unless you were a veggie. 
There were lots of fruit and fishes 
and there was no washing up. 
( he didn"t have no dishes.) 

His cave it was quite sparse, 
no paper on the walls. 
He had a few cave paintings. 
( but that was really all.) 

The view was picturesque, 
a Planners dream for sure. 
It really did look nice. 
(like a glossy pic brochure.) 

Ugah Fugah was a guy 
who thought he had it made. 
Surrounded by young ladies. 
( their attention did not fade.) 

Especially when by accident, 
he started a small fire. 
Just by hitting flint together. 
( that"s all that was required.) 

But the flames they just got higher, 
and then it was no joke! 
The whole place disappeared. 
(up in a puff of smoke.) 

There was no Fire Brigade, 
it really was a Buggah, 
and guess who got the blame. 
(poor old Ugah Fugah.) 

He really was the first, 
that as this New World turned. 
To find himself in trouble! 
(and get his fingers burned.) 

And it is true today, 
a glowering look "I" catches, 
when I hear Mother say. 
("Don"t ever play with MATCHES!)

Salute the Sweet Tooth Eh

Nutritionist, diabetes or 
dietician
All to be unheeded in my 
sweet tooth's opinion.

For how can I abandon
That chocolate canyon?

And same goes for yummy 
chocolate fudge
Eh to a trifle could I bear 
any grudge?

Ah treacle or caramel pudding
And apple crumble needs no 
bidding

The craving wishes to devour 
the dessert
Few would desert a tasty jam 
tart!

Not forgetting swiss rolls and 
cup cakes
and whatever other 
sweetmeats the baker bakes.

Ah custards, ice-creams, 
muffins and jellies
the only deterrent perhaps, the 
fear of rounded bellies

Only if the dietician would 
recommend instead
to cut down on leafy grassy 
veggie salad

For if there was for it a polling 
booth
I'd vote in favour of my sweet 
tooth!

Veggie Blunt

My babies loved the cats,

through the ages of the naps,

in the pages,

in the clasp,

on the floor,

atop a mat,

I pull it out and flip a bat-
let a lover free the band,
so I may rebuttal and unleash some wrath...


Because just one tap on the blacks,
leads a lover to the back,

just like one Cambridge man of the past-
holds a drink,
and chats your gas-
shoots your lore back at the boss-
holds your cross with MS DOS,

dances slow,
without a flirt,

dances slow,
and acts the jerk,

wounds the birds,
with sailing lurch,

corrodes the curbs,
with wheeling verse,

feeling verve-
eats the skirts,

while doing peddles,
and bronzing metals,

mutating meadows,
while racing against yellows,

seasons those fellows pollinating in the bellows-
of an R1 while you're having so much fun...

Being a beast while you're facing the gun,

in the rip of time between going home and burning the buns,

focusing on the fever that got you your lump some.

Endowed by the Almighty
gracious provision-source bounty
our orphanage garden’s identity
exudes wondrous natural beauty…

Green-leafy vegetables of health purity
strengthen well-being tenacity
while their buds assure with certainty
palatable veggie salad of nutritious verity…

Flowers cheer with their varied colors, indeed pretty
white angels midst sampaguitas waft their scent’s serenity
rosas de baybayon and red petioles show their dancing faculty
as yellow bells hide amongst peace lilies their petals so dainty…

Gracious orchard offering refreshing security
our “Gardenage*” invites us for lung exercise stability
meeting us with its relaxation bliss availability
serving as haven, rejuvenating care-giving faculty...

'Plantscaped' fortress against attacking irritability
welcoming Bible meditation, upholding faith’s tenacity
nurturing moments for prayer tranquility 
our “Gardenage” brings blessings** of God in functional entirety.
 
*"Gardenage" is the name of our orphanage garden, since we have several gardens encompassing our church’s “Botanical Ministry.”

Jaywalking

This is when the old and the young,
beasts and confraternal drunks
damn the consequences of death
lying porous on crossroads upon
bifurcated paths, fractured junctions
and ceremonial cul-de-sacs...

The time is immaterial,
so long as the traffic lights — the veggie-green,
the claret, and the urine-amber —choose their slow
blinking and rapid-eyelid movement carefully.
And moon might decide not to power its own light.
Tenebrous tracks then fill our eyes with the age of
sea monsters blinded by charcoal waves.
Need I hail the neon signs of bordellos!
And the city’s restless constellations!
They sparkle with rage and with the brio of rioting stars,
thus adding celestial films to our already overloaded eyes....
But that’s another story.

C’mon... we are no Deer or Asahel descendants!
Closely related to sloths, millipedes and snails,
we drag our feet, which in turn drag the volumes of
stupidity in us, aggravated by drams and midnight parties
held between a flowing weekend and a stagnant Thursday.

Hey buddy, let me tell you what's goin' down.
Listen closely, you'll hear the sound
of my kitchen, underground.

What I'm cookin' is so hot, as it were,
you might call it nuclear.
I'll make some for him, some for her.

I churn out the grub, hot and fast.
My cooking's like a firehose blast.
As much as I make, it won't last.

I put some dough on a sheets-a
where a jalapeno and mushroom meets-a
you've got yourself a red-hot pizza.

Hey man, I'm cookin' - don't you worry.
No time to waste.  I'm in a hurry,
I'll need peppers for this veggie curry.

Time for burritos and enchiladas -
pull up and eat, this ain't the Ramada.
I've invited the Spanish armada.

For blazing chow,  you are itchin'?
Grab a knife and chop.  Come on, pitch in.  
It's the first underground nuclear kitchen.

Premium Member Care Giving Delight

Called for blessed volunteer service flight
My soul responded with mixed feelings’ height
Yet prevailing was God’s compassion-might
Thus, I plunged into care giving delight.

Acknowledging ambivalent heart
I faced orphanage tasks midst challenge-dart
Strengthened by Christ* to fulfill my best part
With divine approval right from the start.

With years of care giving to the fullest
Expertise is earned through love so earnest
Learning to practice sincere kindness-zest
Toward triumphant great life-building crest.

Now, I enjoy surrogate mother role
Basking in successful child-bathing goal
Midst gracious patience from south-to-north-pole
For special son to feel nice, freshly whole.

I feed him, meeting his appetite need
Letting his tongue savor nutritious breed
That includes veggie, cereal, fruit and seed
With meat or fish, palatable indeed.

Then to fruitful learning I usher him
Midst sign language along funny sound-whim…
When he hears my voice, devoid of strict grim
He shows thumbs-up with smiles of gladness’ brim.

Daily, I help him drive himself with glee
Letting him propel wheel chair of fun-spree
Allowing his laughter to reign freely
Against boredom from where he wants to flee.

In therapy sessions, he has my cheer
Clapping for him so he won't shed a tear  
In his difficulty, he finds me near
As sweet Mom, holding precious one so dear.

Striving to brace up his functional zeal
I enable him to soar with faith’s seal
As my spirit hopes for progress that's real
Always, we both seek God through prayer deal.

Such is scenario of care giving act
I’m exposed to with eternal impact
Hence, I thank the Lord for blessings, full-packed
Brought by expertise yon profession*’s fact.

*Philippians 4:13  I can do all things through Christ which strengtheneth me.
