Tarte Citrus Notes

10 chicken breast filets
split a pounded
in a food processer add.....
2 chicken livers steamed
1/2 cup of mushrooms
1/4 c wilted arugula(chopped)
1/2 t nutmeg
11/2 c of ground chicken
1/4 cup of heavy cream
1/4 c of crumbed bacon
4 Tablespoons capers
1/2 cup of cream cheese
1/4 cup of fresh parsley
3 crushed garlic cloves
3 tablespoons of grated parmesan
2 tablespoons of  conage
1 teaspoon of cayeene peper
1/2 t of fish stock
1 t lemon juice
mix smooth....................................

spread creamed mixture over chicken breast
layer 2 slices of procuttio
roll breast 
coat with seasoned flour
(in a blender combine)
1/4 c corn flakes, 1/2 c seasoned bread crumbs)
add to
2 cups of flour
3 T salt
3 T cayenne pepper
paprika
black pepper
onion powder
garlic powder

2 cups of panko bread crumbs

olive oil for frying
bake for 25 minute on 350 use a thermometer

Serve with
smashed potatoes
and smashed brussel sprouts
and honey-buttered corn

dessert
almond rasberry tart
with pastry cream and vanilla ice cream
with white chocale shavings

Suppa Sauce

3 Cups of sliced portabella mushrooms
3 Cups of sliced Onions
2 Cups of Sliced Red Peppers
1/2 cup of sliced Garlic
1/4 cup of worishire sauce
1/3 cup of crumbed cooked bacon
1/4 brownsugar
2 cups of Mambo sauce
% cups of Philly Style CheeseSteak

Sautee veggies, brown meat
mix sauce and brownsugar
Mix together and cover
allow to stand in a oven on 250 heat for
2 hours.
Serve on toasted hoagie bread and cheese
with fries and kethup!

The Wait

The coffee cup, cracked, 
the newspapers, stacked, 
the teaspoon, tarnished, well used. 
The bills neatly piled, 
the kitchen, Delft tiled, 
the face, time worn and bruised. 
The phone in the hall, 
for no one to call, 
the pendulum clock still ticking. 
The photos, well thumbed, 
jam stained and crumbed, 
old wounds, in need of some licking. 
Words said in haste, 
that left a bad taste, 
the slam of the door like thunder. 
The pain of separation, 
a cardiac laceration, 
two people, two lives, torn asunder. 
And now the clock scolds, 
as the wrinkled hand holds 
the only letter received, scrawled in haste. 
Of the need to be free, 
and how it must be, 
when two hearts disagree, what a waste.

The deal with trucks (should you not own a truck)
that lollipop horsepowered cylinders -
is really how remarkably well they suck
the rubber tread where the interstate scissors
its cousin, Dixie, born Mississippi,
born as a man and staunch straight-ticket-down
yee-haw! Republican, a down-low-bi-
sexual, wearing Grand Wizard wedding gowns
in pappy’s cabin built on rolling logs,
who each day climbs the thick-cylinder pole
that proudly displays confederate cogs
to the eighteenth turn called a glory hole
where all the king’s horses and all the kings men
absolve all the crackers their cracker-crumbed sin.

The Hannans Way

If you like to eat good food
Plus enjoy yourself as well
There is this little place I work
It's called the Hannans Hotel 

T-bone or rump are our steaks
With salad, veg or chips
4 yummy gravies from which to choose
Just wait till it hits your lips

Battered, crumbed or lightly grilled
Our fish deserves a taste
Served with lemon and tartae sauce
I assure there'll be no waste

How would you like a roast tonight
With veggies fresh and hot
Pork or lamb, chook and beef
Even silverside we've got

A chicken parma or a hearty soup
Plus the wet dish of the night
Which could include a casserole 
Or a chilli, so watch that bite

Now when your bellies nice and full
The bar's just a step away
Sit back, relax and have a beer
And enjoy the Hannans way.

Yemeni

Yemeni 

Plumes of smoke a mortar shell hits brown rocks,
Does it ever rain in this country?
Two warring tribes and yes it is Yemen again, only this time
Americans with their drones have taken side
Both tribes are equally awful
I think they chose the one that speaks the best English.
From the bridge of my I saw Yemen through my binoculars 
And it looked like a place fit for wild goats and
eccentric with crumbed, ornate knives
A place for dust coloured mountain ranges and thorny bushes
Too hardy to be rained on. 
Yet squabbling people live here and fight and fight for reason
That is older than history; and over this ancient landscape 
The Americans strew drones like it should be wedding confetti.

The Myth of Laureled Paradise

A living corpse breathes on the bed
   Light and Death cool the sweat
   Beading on the forehead of blank
   Centuries heeding on greed and a
   Invisible monster numbered in the book
   Of souls misting in the laughter of science

   Come now the voices
   Coo and be reborn into the bleeding
   Tapestry of blood and violence
   Sex and death pulse from the atom
   Bombs and the makers of worlds destroy
   The color like lead throats choking
   On the beauty of a balmy window soothing
   The pain in psalms ruptures butterflies and bees
   In the breeze of yellow summer lying in haze

   White sheets wrapped in murders’ dingy
   Rooms fading windows lust stabbing
   Each heartbeat a vision of nothing
   -ness and the lyric of one more soft
   meal and the murmur of crowds chanting
   the name of digital songs evoking Gods
   dead in the commerce of equations stocks
   falling in the channels of streets babbling
   from scabs of dreams dry and broken the
   bread is poisoned words empty cupboards
   crumbed with the myth of laurelled paradise…
