Don't drink the pickle juice
for your caboose will cut loose
Beans indeed will make you toot
really are the magical fruit
Cabbage can be savage
for the air it will ravage
Open the window on burrito night
don't strike a match for a light
Eating kimchi a Korean treat
from your bottom sounds will tweet
To many raw vegetables and leafy greens
will release gases the smell obscene
Go ahead eat those foods all you can
but go outside and toot down wind

Chasing Akkermansia

I’m chasing akkermansia
I’m racing to the health shop
Hopping from aisle to aisle
So that I can find some beneficial bacteria
I need more akkermansia
So I have to change my food!
This is essential to the quality of life

Walnuts could help me and 
Set me free of the bad bacteria
Pomegranate juice and Cranberry Juice could pave the way
I know that sugar can destroy the good bacteria
While akkermansia can help me get rid of some toxins!

I’m looking for sauerkraut in aisle one
This might be quite fun
To my left, Kimchi shouts at me 
While the apple cider vinegar points to me
Further down I see the dill fermented cucumbers
All of it appears to be sour but I realize that 
This could be the power in the gut for transformation!
In the end, I need more akkermansia
So I have to change my food!
This is essential to the quality of life

Premium MemberSupper Is On the Table

Footsteps of bare feet press into the mud of the path
Raindrops like soft pearls fall from darkening clouds
embracing the blue mountains
I trod along despite the chill and the wet
up a familiar path the soles of my feet
have known since childhood
Holding my shoes to salvage them
not wanting to clean off cakes of mud
or ruin their insides. Up and up
step by step with pant legs rolled up my legs
I march up the narrow mountain path
Need to reach the plateau where the field resides
and amidst an evergreen woods a cabin rest
Through the branches I see the chimney smoking
Before the path becomes a stream I squish my way
up a landing and here I am
My head above the clouds
my feet on grassy ground
I see the bright warm light
emitting from the front cabin windows
On ward I walk to reach my childhood
and in the air the smell of dumplings and kimchi stew
Up the front porch steps I leap
and knock on the worn front door
it opens wide and my tiny grandmother
smiles her toothless smile
Wipe your feet boy
supper is on the table

Kimchi Blues

Oh yeah 

I got the kimchi blues
every day since I first ate it
back in the day

long before i went to Korea
ended up staying on in Korea
after i retired from decade
in the Foreign Service

and ten years studying
and living in Korea
before I joined
the Foreign Service

When I first ate kimchi
I was hooked
sort of a spicier version

of German sauerkraut
which i loved on my top dog
from Berkeley high school days

then off to korea
in the peace corps
where I ate kimchi

every day for every meal
and eventually I woke up
dreaming of kimchi and rice

instead of pancakes and eggs
then I knew
that I had finally adjusted
and was becoming half Korean

and now I am a hopeless kimchi addict
need to have my spicy kimchi
which is so good for you

perhaps even defeating the dreaded corona virus?
who knows but I will be eating Kimchi
until my day is done
