My cousin Finn was raving about the new dish at Claude’s Diner.
There is no appetizer better, truly nothing finer.
They call it Chestnuts roasting over an Open Fire.
I had to run out and try it, I had such a desire!
Are you sure? Asked the waitress, my Auntie Maude.
Oh, yes, I said, staring past her at the cook Mr. Claude.
Claude began cooking and Maude left, her grin bright.
Guess what it is? She asked as I gave the dish another big bite.
Chestnuts? I guessed, but it truly tasted much more like meat.
You are not even close, she told me. Do you think they are sweet?
The best of the best. What is the secret? What special stuff does he put in?
Mountain oysters, or deep fried bull testicles, said my amused cousin, Finn.

It’s been ages since I cooked chestnuts for mother
Now that she’s in Heaven enjoying better things.
But each year she would ask me for her favourite
Which always happened at Christmas.
And who am I to desist from giving her what she wanted.
To tell you the truth I hated this concoction.
But would I deprive my mother from her wish?
My sisters positively hated it
But I loved my mother so much
So every early November. I would cook

Until the day she died.

One day I visited the park with my family.
We ate some PBJs and various other sandwiches.
I decided to walk off with my journal to study the various hues of leaves.
Trees of gold, scarlet, and bright titian surround me.
There, through the mosaic of colour, I see a special tree.
A chestnut tree.
Tall, majestic, and surrounded by dozens of burgundy buck eyes.
A beautiful display, indeed.
I retrieved one of the nuts, examining it.
Waves and bands of rich auburn and enticing garnet.
A spot of creamy alabaster.
Chestnuts, the most beautiful nut I have yet seen.
I collect 25,
because I just love to look,
At those beautiful chestnuts.
