Chestnuts For Mother

Try this recipe my friends and think of my mum.:

  • 300 g dried peeled chestnuts
  • 200 g sugar
  • 90 c cocoa powder
  • 1 cinnamon stick
  • 6 cloves
  • ½ teaspoon spice blend (cinnamon, nutmeg, cloves, etc.)
  • Rind of 1 mandarin
  • 4 tablespoons cornstarch

Instructions

  1. Wash and soak the chestnuts for at least 8 hours.
  2. Drain and put the chestnuts in a pan. Add 4 cups (1l) of water, cinnamon, cloves, cocoa powder, sugar, spice blend and mandarin rind cut in small pieces.
  3. Bring to a boil and simmer until the chestnuts are tender, about 1 hour.
  4. At the end of cooking, break the chestnuts into small pieces with a large spoon without crushing them.
  5. Dissolve the cornstarch in a little water and add to slightly thicken the sauce.
  6. Serve hot in a cup or a bowl.

It’s been ages since I cooked chestnuts for mother
Now that she’s in Heaven enjoying better things.
But each year she would ask me for her favourite 
Which always happened at Christmas.
And who am I to desist from giving her what she wanted.

To tell you the truth I hated this concoction.
But would I deprive my mother from her wish?
My sisters positively hated it
But I loved my mother so much
So every early   November. I would cook
My mother’s favourite dish,
Until the day she died.
May she rest in peace.

Chestnuts are not appreciated in this part of the world..Found your mum's recipe interesting. It has a decidedly seasonal flavour....Delice

Very few people would do that so it says so much about you and your love and respect for your mom. I don't think I have ever tried a chestnut in any form so I have no idea if I would like it or not. I am sure that we can't get chestnuts in this area because I have only seen one chestnut tree (or it might be a Hazelnut tree) that is on my old school campus. The recipe has some good things in it cocoa and spices so it might be tasty. Thanks for the visit to my page. Sara

I wanted to try the chestnuts Victor, was wondering what the consistency is of this, is it gloopy like mashed potatoes, or more liquidy like pouring pancake mix, ?
