Beef and taters are a meal thought Dad
Didn’t want Italian, which he never had
Refused to try chicken, pork or fish
Beef and taters were his only dish

Would not eat pasta, it did not look good
Brought home steak from the farm when he could
Liked potatoes broiled, stuffed, cheesed and baked
Beef and taters are for what he ached.

Taters

clap for mashed potatoes
gravy on the side

ketchup smothered
is how i like my fries

love a baked potato
stuffed with everything

even like them broiled
butter and sour cream

hash browns grilled with onions
get my taste buds jumping

sometimes like them fancied
dressed up in au gratin

slurping of the soup
sprinkled down with parsley

even eat them raw sometimes
though the taste is gnarly

smoked me a tater once
down on the farm

followed around behind the animals
till the cows came home

Digging Taters

Digging 'taters by headlights
Can be a bit of a trick
Having to feel in the ground for spuds
Becomes the best approach

Headlights makes shadows
Shadows are darkness
Darkness doesn't give much vision

It is a faith of sorts to feel in the dirt
pushing the thought of a snake
or toad out of the back of my mind.
My reward is a creamy fresh potato meal
The ones I dig taste much better
than the ones bought in a store.

New Socks and Fried Taters

Two of my favorite things in the whole wide world.
Nothing could be better to this old country girl.
My idea of a perfectly euphoric day;
New socks neath my table and fried taters on my plate.

If I had the means, I'd buy new socks each day,
and with shear delight, I'd give yesterday's away.
No need for gifts of gold wrapped in a fancy box.
Just slather my two feet in soft, plush socks.
Some swoon over chandeliers to adorn their apartments.
I drool in a cold sweat, searching the sock department.

Give me fried taters; a lot, not just a little;
crispy on the outside and tender in the middle.
To get me "in the mood", don't bother with pricy wines.
A skillet full of fried tater, for me will do just fine.
Breakfast, lunch and supper, or a midnight snack for later.
This explaines my childhood nic name.. No secret, it was Tater!

some folks is brown
some folks is white
seems like to me
they do nothing but fight
if taters is ok
and gravy makes em good
why can't folks get along
like taters n gravy should
