Hi Carolyn~I kept scratchin' my head wondering who came up with this clever entry...and it was YOU! This dish sounds very delicious and the fact that it's a tradition and takes a lot of effort to peel those taters, W_O_W! Just sounded too good! Thanks for always putting in a great entry for my contests and for your thotful mentoring since I joined this site earlier this year. Yum!!! I make these same kind of "pancakes" out of zuchinni too! Yummy!! These sound heavenly too, Carolyn! Do you ever make something similar out of leftover mashed potatoes?...that works too! Great poem!! Best of luck!!

Reads like a winner.. I do something similar using leftover mashed potatoes..Good luck in the contest..I will have to try this one sometimes..I am sure that people who had access to very little flour but had potatoes came up with this idea..Glad that you got chuckle about my last work..Sara
