The secret to a good pie crust involves not mixing the batter too much. The fat-coated bits of flour should be the size of peas. Add the minimum amount of cold water needed to form the dough for rolling. Never re-roll the dough!

It's not a dessert-worthy treat But something disgusting to eat If not rightly mixed Pin-rolled and affixed Your pie crust will taste like concrete

This rings true, Duke: Even cooking has rules and abiding by them is the difference between failure and success…..and emphasize fresh ingredients. Floury hugs, SuZ

There's nothing (repeat nothing!!!) as tasty as a homemade pie done right. It's a wonderful thing, but takes time.

My absolute pleasure Daniel. We are all just trying to make this a better place and feel good while doing it!

This was a funny limerick. Perhaps pie dough could be used on the roads, but then, it would be expensive. I dont know if the store bought kind is better.

Hilda, they may be using it...that's why we have "pot" holes all over the place here. At least the homeless would have something to eat! I'm not sure which is more expensive per square yard.

A funny, classic limerick, Duke. And thanks for sharing the baking tips in the notes. Answers a lot of questions.

Thanks Silent One, Generally, I do like to bake for company or visiting family. Most people don't get the chance to eat really good home-made pies and I like giving them a treat.

We eat at home a lot and rarely eat out. However, my wife is the grand chef of our house. I have been baking pies for 60 years or more, and have made all the mistakes possible. One time I left the pie on the oven bottom--not a shelf, and it charred the crust. That's but one example. I wish I could make a pie for you! Have a great weekend as well!!
