Dear POETRYSOUP - 2

Hello Poetrysoup, My name is Phillip (Flipper) Rollings. I Gaduated from Chef's class of 2011, "August" 25."  To most people that date means nothing to the Chef it was is  Sacred. I remember as if it was yesterday Graduation Ceremonies started at !2:02 P.M. They began for for me at 7:13 P. M. Forty years to the minute, After Chef's beloved Lenore died. What a coincidence You say. Let it be known Chef planned it that way. I remember when we talked at the Farewell , Good Luck Dinner. " Phillip", he says (Chef has never called me Flipper) "I remember when your father was your age. He had the same desires, drive, and talent as you do, he lacked in the paperwork of the kitchen, as Do I. So your father and I came up with a way we wouln't have to do all that paperwork. What if we turn the restaurant into a school for the new generation of Future Chef's. between You, Rosalyn, and myself; we could fix any mistakes the students might make. We charge a tuition fee, but if somebody comes in off the street who has no finances If their Spirit    is true to their art they won't have to pay anything." " Phillip, today is the beginning of a new Life for you and for me as I retire. This is my second chance at the begining of a new Life, exactly 40 years ago today. As you go out into the World of the Hospitality in
the World of the Culinary Artist. Choose your staff according to experience,talent,ability, and Willingness to learn. Develope those who serve you best. If Bob has 6 months and Jim has 3 months but Jim is faster and pays more attendtion to detail then Jim is lead cook.
