Sticky Love Medallions
3/4 cups of cilantro
1 cup of chopped red onions
1/4 cup of crushed garlic
1/4 cup of chopped gingerroot
1/2 cup of celery chopped
1 cup of chopped red pepper
1 cup of lime juice
1/2 cup of honey
5 tablespoons of white distilled vinegar
3 tablespoons of liquid smoke
2 cups of coconut milk
4 cups of Coca-Cola
2 cups of spiced rum
2 cups of water
5 pounds of fresh pork hocks
3 tablespoons of salt
2 tablespoons of cayenne pepper
5 tablespoons of fish stock
in a large lid pot cook for 2 hours, or until fork tender.
1 cup of degreased broth
1/2 cup of white vinegar
1 cup of pineapple juice
1/2 cup of chopped pineapples
1/4 cup of honey
reduce by half and top hock and serve with a garnish of green onions!
