Selection Number One
5 cups of cooked black rice
2 cups of cooked kidney beans
3 cups of cooked lamb sliced thin
sauteed in garlic and olive oil
1/2 cup of onions diced
1/2 red bell pepper diced
1/2 cup of shredded carrots
1/4 cup of diced celery
1 cup of sliced mushrooms
2 tablespoons of diced seeded jalapeno pepper
1 teaspoon of diced rosemary
1/2 red Merlo wine
1/4 cup of lime juice
1 cup of plain yogurt
1/4 cup of grated parmesan
1/4 cup of olive oil
1/2 teaspoon of cumin
1/4 teaspoon of paprika
3 cups of a savory chicken stock
in a large pan add oil onions and veggies
soften
add spices and jalapeno
add additional olive oil and cooked lamb
stir the mixture add rice and stir until toughly mixed
add kidney beans than add yogurt
and parmesan cheese. stir in stock and reduce heat
and allow to slow cook for 35 to 45 minutes on a low heat serve with a sprinkle of chives and a dollop of sour cream.
