Hashi Pork Roast For Many

shaved roasted pork butt about 10 pounds (cooked rare and shaved) in a large pot combine 3 cups of diced onions 1/4 cup of minced garlic 4 tablespoons of salt 3 tablespoons of cayenne pepper 2 tablespoons of tyme 1 tablespoon of basil 3 cups of green peppers 2 cups of olive oil 2 cups of dried tomatos 5 cups of shredded cabbage 2 cups of shredded carrots 2 cups of shredded fennel bulb saute in the oil until the vegges are wilted, add one quart of pork stock 5 tablespoons of anchovie paste, allow to simmer if the mixture reducesto about half you've measured right, if it doesn't, add 2/3 cups of heavycream, and then add 1 1/2 cups of brown roux, create a sauce, add pork and place in a 350 degree oven, serve with rice ( you can also serve with some steamed shrimp )
