Thanks, Jan! In the rural South, collards are considered a staple. They fall in the same category as turnips, mustard greens, and rutabagas. They really are good, and easy to prepare. Just boil them with a chunk of ham hock until tender and serve them with a sprinkle of pepper vinegar and lacy corn bread and you have a literal feast. Happy Easter, my friend!

Yum, yum, yum. Sprinkle pepper vinegar. Dash of salt, few grains of pepper. Nothing finer. But not so common north of Carolina nor west of Oklahoma!

All true, Leo! I was stationed in Oklahoma during my Air Force career and I have a step-daughter who lives in North Carolina. I have traveled north of Carolina and west of Oklahoma, but did not find any collards. Thanks for your great response.
