Lemon Tart


Lovely lemony filling such a tasty treat
Easy to make, and so delicious to eat
My recipe is so easy, I confess that I cheat
One pastry case bought in the high street
Now everyone will know about my deceit!

Two eggs, sugar, and heavy cream is best
Add juice of two lemons and lots of the zest
Rapidly whisk, but do not splash your chest!
Then bake tart in the oven, it’ll thrill any guest

Jan, from one baker to another....it's quite all right to purchase a prepared crust for these pudding like pies. They are so much of a treat really. Whether or not to roll a crust sometimes depends on how much time we have and the mood we are in. Smiles!!!

aww pashang, my beautiful butterfly friend I have missed you and your wonderful poems and paintings and still cherish the fact I (as a dragonfly) was incorporated into one of your artworks! I have self published 2 books of my silly poetry (not to everyone's taste but i try and raise a smile lol) I spend less and less time on the site as do many of my old friends but i plod on when my muse behaves. hugs jan xx

What a delight Jan! I've probably only baked for guests about 4 times. I'm better at chopping and combining - so guacamole or tabbouleh. I'm sure your guests don't mind a pastry short cut :)

I just had fun with the contest I hope Andrea likes my effort. I love making lemon tart and taking it round to friends if we are out for a meal but i do cheat with the pastry case - and why not lol. at least I admit i cheat lol
