Enchiladas

Eggplant makes this dish -
No meat, no fish.
Cheddar cheese?
Have another helping, please!
I like mine with beans and rice -
Lot’s of garlic, onions, and peppers for spice.
Avocado enchilada sauce -
Delicious, with the salad I will toss.  
All of this for my good friends -
So they will come back again.
