That is nice. I love eggplants in casseroles, and fried, you make them really sound delicious as they really are.

This sure sounds delicious Sara-- lucky you to be able to harvest enough eggplants for this yummy casserole! I've actually made this one too (haha grocery fresh eggplants though) & they sure are fun to do, so much like making lasagna!! *burp* -- nikko :)

Almost the way I make it Italian Style Sara.. we add spices of oregano and parsley to heighten the flavors and lots of parmesean cheese also along with regular American sliced cheese.. yummy poem.. enjoyed.. with luv..
