Can't find pictures of my tuna/green bean stuffed potatoes but they look something like this. Let your imagination soar with twice baked potatoes:

The REAl Spanish Omelet below (I actually fry mine into individual shapes instead of making a whole "pie' shape)

So versatile is the potato. It’s orange; it’s yellow; it’s white; it’s sweet. It’s baked or boiled; it’s mashed or fried. It’s served with poultry, with fish or with meat. I love to cook, and I have for you three recipes for potato dishes. Not too expensive, they’re easy and fast. But best of all, they are most delicious! A Tator Tot casserole I love to bake. With my company, it’s always a hit. Ground beef fried with onion is mixed with creamed soup and the bag of tots! Bake with cheese over it! From my childhood comes the twice baked potato. I’m sure you’ve heard of it – bacon and cheese. But try some canned tuna with canned green beans. Top with good cheese; microwave; it’s a breeze. Last is a recipe that I obtained from the time that I spent in Madrid. The Spanish omelet’s really big there. This is a recipe that I “redid.” I fry chopped potatoes and onions in oil. Salt and pepper it; drain off the oil when gold. Stir in lots of eggs till it’s moist and thick. In omelet shapes this mixture should hold. Onto a large griddle, pour each omelet shape. Turn them like pancakes when each side is done I’ve Americanized it by adding Tabasco, melting cheese on it too; this food is so fun! These are just three dishes made with potatoes. I have many more. Very entertaining. If I were a cook, I'd certainly try these. I tend to be more "the eater". I have written some "Road Kill Stew" stuff that rhymed. Well as close to rhyme as I get. :o) Thank you for sharing your work with all of us on the "soup". No pun intended. :o) Keep them coming. We're up for seconds. :o) oldbuck

I love doing things to potatoes, always have. What kind of cream soup with the tots? I want to try that. This is a very mature poem, as though Betty Crocker herself were poetically addressing us from a home ec class in the fifties. I mean that as a compliment, it has such charm and confidence. Hello Andrea … what a great verse to encourage people to cook the humble spud. I really enjoy the chats steamed with butter, salt, pepper, and cheese, or cooked in coals making the skin slightly burnt and crisp, but boy or boy, your recipes read great - thank you Andrea - Lindsay

Potato heaven - roll them, bake with them, have fun with them, fry them and pat them and bake them with cheese, don't forget to microwave, its a breeze - love this poem Andrea - it has a certain sing song beat to it and definitely some delicious recipes! Love and hugs, Jennifer.

You right it's versatile...potatoes fit anywhere...with bacon better, especially if mashed and buttered...well the omelet is a standard for me and you can't go wrong baked like a shepherds pie...

yours are the first recipes i've even seen in rhyme, andrea, and you've done a wonderful job of it! i'm not much of a cook but these do sound pretty easy and delicious...
