----------------------------------------Because these clams have brittle shells that shouldn't be pried open raw, they require a quick blanch. Immerse them in boiling water for about 15–20 seconds just until they open slightly, then transfer to cold water. Once cool, use a paring knife to slice down the head of the shell, cut the adductor muscle, and pull off the outer dark neck skin-------------------------
