Coq Vin

I let 7 pounds of chicken marinade
in 2 bottles of wine rosemary thyme garlic, 1 hot pepper
we added no salt thinking sodium intake could be monitored
midway through preparation. in the morning
I preparade a batter, of cayenne garlic powder, onion powder and celery powder 
with some smoked paprika. dusted the chicken and fried
 it slightly golden in some Olive Oil.
I prepared 2 pounds of bacon cooked, crumbled and measured
about 2 cups. set aside.

mix Together
4 tablespoons of tomato paste
1/4 cup of brandy
2 tablespoons of fish stock
1 T lime juice
mix and set aside

Sautee in bacon grease and Olive Oil
chopped 1 cup of mushrooms and two cups cleaned whole mushrooms
1&1/2 cup of carrots sliced
3 cups of diced onions
1 cup of yellow bell pepper diced
1/4 cup of or 5 Tablespoons of minced garlic
-----------------reserving 2 cups of marinade

in a large oven ready pan
add chicken,4 cups of veggie stock or chicken stock or both
 pour in strainbed wine from marinade
and 2 cup of water
mixed with tomato paste mixture
add bacon and veggies
cover with foil and cook at 350 for one hour and fifteen minute
un cover check temperature adjust seasonings and salt
cook until chicken reaches 165 degrees.....
serve with mashed garlicy potatoes and or mashed sweet potatoes.
Best with cabbage  and kale combo........Or a String Bean Dish.
