In France foie gras is always served with Christmas dinner, a tradition the French hold very dear. It's not cheap but it is delicious. I've never heard of "cherry-smoked foie gras" however. Not sure what Christmas Pudding is, except it sounds very English rather than American. Thanks for the stop by. Best to you. / M

Some Fine chefs, I believe, still will smoke the foie gras in a smoker over cherry wood flame/smoke. It may be Hungarian in origin...I don't know...but truffles are fabulous in its preparation as well. ;)

Dear Maurice. Thank you so much. Actually it is cherry wood smoked and from our colonial time period. The pudding is indeed English, but also from colonial days. Lol. America is a conglomeration of entities, from it's inception. Big Hugggs. Deb
