Awesome Things

thats what them people in the tent was cooking
and eating. Told me it was" Chou-pozole!" I said nay-nay
I don't touch the stuff. Then when the serving came out
I said give me some Mister.
"Out There Cabbage Soup"
Pozole Cabbage is a soup.
two cabbages cut into four quarters.
Cooked( no salt) and drained set aside
in a pan Sautee in olive oil
2 cups of onions
1/4 cup garlic
1/2 diced red bell pepper
cook and set aside

make some pork pot stickers
3 pounds of ground pork
1 cup of shredded cabbage
1 cup of parmesan cheese
1 cup of chopped parsley
1 cup of shredded mozzarella
4 teaspoons of minced garlic
3/4 cups of onion
1/4 cup of cornstarch
5 Tablespoon of soy sauce
4 Tablespoon of fish stock
2 T brown sugar
1/4 c port
2 T lemon Zest
2 T lemon juice
2 T cayenne pepper
4 egg yolks
Mix and set aside
Egg roll wrappers
trim edges and freeze until used
steam until done
about twenty minutes

bring about 1 gallon of pork stock to a boil
add 2 cups of apple juice
2 cups of port
add cabbage
and veggies
add 1 cup of shredded carrots sauteed
add cabbage
warm over until flavors blend togeether
serve in a bowl
topped with the pork dumplings
and green onions.
