History leaves no doubt that among of the most regrettable crimes committed by human beings have been committed by those human beings who thought of themselves as civilized. What, we must ask, does our civilization possess that is worth defending? One thing worth defending, I suggest, is the imperative to imagine the lives of beings who are not ourselves and are not like ourselves: animals, plants, gods, spirits, people of other countries, other races, people of the other sex, places and enemies.

As far as whether we are allowed to kill and to eat animals, there is a remarkable ordering of matters in Holy Scripture. We can read how, at first, only plants are mentioned as providing food for man. Only after the flood, that is to say, after a new breach has been opened between God and man, are we told that man eats flesh...Nonetheless...we should not proceed from this to a kind of sectarian cult of animals. For this, too, is permitted to man. He should always maintain his respect for these creatures, but he knows at the same time that he is not forbidden to take food from them. Certainly, a sort of industrial use of creatures, so that geese are fed in such a way as to produce as large a liver as possible, or hens live so packed together that they become just caricatures of birds, this degrading of living creatures to a commodity seems to me in fact to contradict the relationship of mutuality that comes across in the Bible.

There are two modes of criticism. If God would choose a plant to represent him, I think he would choose of all plants the cactus. The cactus has all the blessings he tried, but mostly failed, to give to man. Let me tell you how. It has humility, but it is not submissive. It grows where no other plant will grow. It does not complain when the sun bakes it back or the wing tears it from the cliff or drowns it in the dry sand of the desert or when it is thirsty. When the rain comes it stores water for the hard times to come. In good times and in bad it will still flower. It protects itself against danger, but it harms no other plant. It adapts perfectly to almost any environment. It has patience and enjoys solitude. In Mexico there is a cactus that flowers only once every hundred years and at night. This is saintliness of an extraordinary kind, would you not agree? The cactus has properties that heal the wounds of men and from it come potions that can make man touch the face of God or stare into the mouth of hell. It is the plant of patience and solitude, love and madness, ugliness and beauty, toughness and gentleness. Of all plants, surely God made the cactus in his own image?

People are the common denominator of progress. So... no improvement is possible with unimproved people, and advance is certain when people are liberated and educated. It would be wrong to dismiss the importance of roads, railroads, power plants, mills, and the other familiar furniture of economic development.... They determine precisely what should be produced, in what quality, and in what quantities. They are merciless bosses, full of whims and fancies, changeable and unpredictable. In their capacity as buyers and consumers they are hard-hearted and callous, without consideration for other people.
