PEANUT BUTTER MUFFINS

My husband, Ben, loves peanuts and peanut butter. This afternoon I surprised him with this new recipe which I concocted. It is delicious! I thought I would share the recipe here with you. Wishing you a splendid weekend. 
PEANUT BUTTER MUFFINS – MICROWAVE
Makes 6
INGREDIENTS
½ cup (125 ml) plain cake flour
¼ cup (62 ml) castor sugar
1 teaspoon (5 ml) Baking Soda
¼ cup (62 ml) smooth peanut butter
1 large egg
100 ml full cream milk
Mix all the ingredients together in a medium bowl – no need to sift or combine the ingredients in any specific order. Whisk well with a wire whisk until the mixture is smooth and all the ingredients have been incorporated.
Spoon mixture into equal portions (about 50 ml - ie 2 Tablespoons) into 6 muffin paper cups. Arrange it equidistant at edge of the microwave plate and microwave it at *HIGH (850 kw oven) for 3 minutes. Remove from microwave oven and let it stand for a further 3 minutes.
TOPPING
Mix ¼ cup EACH of butter and peanut butter. Using this mixture, pipe the top of the muffins and DUST it liberally with icing sugar, using a tea sieve.
OPTIONAL: Decorate with a slice of banana and/or sprinkle peanuts.
*HIGH: You might need to adjust the baking time to allow for a difference in the wattage of your microwave oven.
