Making Onion Stew

Onions, delightful brutes, you mutter
I wipe a soaking eye,
pepper speckled beef shuddering in oil
your arms wafting closer, now further-
smelling tobacco, cinnamon,
a lick of salty neck, a buttery potato
tastes mingle. a tang of thyme between
nape and hair line
the beef was crisp, you turn it over
‘flip!’ you grin, the marble counter-top
icy cool under my slipping hands,
a sprinkle of turmeric trailing down a shoulder
down a back, a splotch of coconut milk
smudged, dappled with wild finger prints
star anise meandering, from blade to blade
trees silhouetted against cloudy, sunset skies,
petals and wings of pure blue unfolding
among branches, my lashes brush your bristles
a glisten trickles, off-key smile.

the onions shed their peels
cheek-smooth, mellifluous
near the kitchen sink, your fingers
peeled off all reticence,
another cheek caressed.
ravenous mouth crushes
a morello cherry
exploring seeds and teeth
savouring the yielding endocarp.
you eat in small mouthfuls
the warm batter, the lemon zest. 

the onions! the onions,
we control the simmering flames,
crushed cloves, velvety coriander leaf-
taste,  a spoonful, a finger tipful
here, I think this piece is done
you bite. mmm, more bites
hair gathered in a tight clutch
more bites. perfect roast
mustard seeds spluttering, 
your thumbs fondles the fleshy petals
of the cardamom pod, 
prying the secret savage garden inside
curry leaves twisting in the heat
arching back,
view of window, upside down
unruly curls on your devouring head
crimson indentations, possessive flags
marking territories, to be filled with marinade
lets mash the meat. knead in the garlic paste-
cream melting on a ravished tongue
hearts thumped in
non-rhyming decasyllables
water jug tittered, then cackled
fell face down, a clatter among
the sizzles, splutters and gasps
aroma misted trance eyes
pulsating up, up, clouding with stars.

we saw later, surfacing for air
night has slurped up all the blue
trees, a blacker black, rustling in the dark-
our onion stew was ready.
